Please include step by step instructions. I’ve read some people boil their potatoes first, does this matter? It would be nice if I could prep them the night before. I tried to make hash browns once and failed. What kind of potatoes do you use also. Thanks!

just boil some plain old white potatoes the night before, drain and put on paper towels till cool, if you don’t do this they will be wet and watery and won’t brown up good when fried, bag them and put in fridge, the next morning, if you want this healthier than normal heat some olive oil in the bottom of a cast iron skillet, add one finely chopped onion, one finely chopped green pepper, the potatoes, salt and pepper to taste and sprinkle with paprika, the secret to good hash browns are high heat and dont move them around, let them cook for a while then gently flip sections over so the other side can brown up……..yummy
BREAKFAST POTATOES
Potatoes, sliced (according to number and size of potatoes/any kind)
Onions
2 tbsp. shortening or fatback grease
1/2 tbsp. black pepper
1 tsp. salt
2 c. water
Preheat heavy black iron frying pan. Preheat shortening 10 to 15 minutes. Add potatoes to hot shortening. Add onions, salt, and pepper on top of potatoes. Put top on pan and steam cook 10 minutes on high. Stir every 10 minutes to brown potatoes. (Total cooking time is 20 minutes.) Add 2 cups of water and steam at high for 8 minutes until water recedes. Add 1 cup of water. Turn down heat to medium or low until thickens. Serve with sausage or eggs.
Box of small red potatoes
1/2 green bell pepper
1/2 large white onion
olive oil
salt
pepper
grill seasoning if you like
Cut all your ingredients into bit size pieces. Arrange them in a single layer on your baking sheet. Drizzle with olive oil and sprinkle with seasoning. Cook in a 450 oven for 20 to 30 minutes tossing with a spatula half way through if you like.
For two people, the night before bake 2 large Idaho or Russet potatoes, when they’re cool to touch peel them and cut into chunks. Next morning heat a non-stick saute’ pan with enough canola oil to cover the bottom on medium heat. Add the potatoes in a single layer and cook until golden brown and delicious on one side and flip and do the same. Season to taste. You can also put sauteed onions in the potatoes before you saute’ them and add cumin and curry powder for a twist.

Mashed Potatoes
4 medium potatoes, boiled and coarsely mashed
1/4 cup butter
1 tsp. salt
1/8 tsp. white pepper
1/4 tsp msg ( if you want)
Dash of garlic powder
1/4 cup milk
1. Combine all ingredients together until well mixed. Spread mixture in a square pyrex dish: may be serve as ir baked at 350 F. for 30 minutes or until top is tinged with gold or brown top under a preheated broiler for 2 or 3 minutes.
Preparation time : 10 minutes
Cooking time: 30 minutes
Serve 4
