I am looking for some easy, healthy, yummy recipes. Short preparation and cook time preferred. Please keep in mind that I’m a college student that works part time and I cannot spend tons of money either. Also, I do not eat chicken or pork. I prefer to eat seafood most of the time as it is lean and healthy. I eat beef very rarely because I prefer it over iron tablets. Thanks! :)

    Stir fry – Put a bunch of vegetables in the wok with a touch of oil, serve over short grain brown rice.

    Soup – Boil vegetables, throw in some noodles, drop in a raw egg or some cooked beans, how about a few shrimp.

    Tortillas, beans & cheese. Slice in some tomatoe and avocado.

    Sandwiches – Get nice crusty bread, good cheeses, fresh tomatoes, grilled vegetables, tuna fish. Also smoked fish on bagels.

    Pilaf – Rice with herbs & seasonings, mix in toasted nuts & seeds, stir in some minced broccoli, carrot or cauliflower, cook using broth for more flavor, add fresh melon on top

    Get some good Indian, Chinese and South Asian cookbooks!

    I love simple salads with some good QUALITY tuna or red salmon on top. Chicken of the Sea makes a great new gourmet variety with different seasonings already mixed in. I really like the lemon dill one in olive oil. Bumblebee makes some good new ones too. YUM!!!

    Don’t kid yourself – seafood is high in natural sugar, and is no healthier for you than meat. The only exception would be oily fish (such as herring, mackerel or salmon) which, providing it’s wild, is full of useful Omega 3 oils. You need to loosen up a little and eat more different kinds of things. Unless you have a religious objection to chicken and pork, in which case, too bad.

    How about an omelette? Healthy and delicious. It has been established that the cholesterol in eggs does not enter the human bloodstream and clog up the arteries, so any worries you have about cholesterol can go out the window. Eggs are cheap (although you should get free range organic ones if possible) and if you grate a little good cheese into the omelette, or add a handful of chopped fresh herbs such as flat leaf parsley, chervil, coriander (cilantro to Yanks), thyme leaf and/or sage, you have a fabulously tasty, high-protein, low-carb meal. It also takes about four minutes to cook a three-egg omelette, so it’s quick.

    Why do you eat beef but not chicken or pork? Chicken’s better for you and pork is more interesting. I personally like beef, but I don’t eat it very often.
