Are my eating habits and my work out plan healthy?

I am 21 was very inactive and over weight, last year i lost about 50 pounds, but i periodically stopped working out and started , and went back to some old bad eating habits this year, and put on 14lbs.However because I now feel uncomfortable when I put on weight I started my plan again but this time i not only want to loose the weight I want all of my body to be toned.

I eat:
3 meals a day and feel no need to snack in between,

Breakfast:
2 weetbixs or,
A fruit smoothie (I make myself with natural yogurt and fresh fruits and a little bit of water) or,
2 peices beans on toast or,
Muesli or,
2 peices of fruit and natural yogurt,
and a cup of tea or glass of Juice

Note: I do not use low fat anything in when I cook or eat.

Lunch and Dinner:

Home made tomatoe sauce and pasta or,
Baked fish and loads of veggies or salad or,
Lean steak and salad or,
Salad with bacon or any other protien prawns lean strips of beef etc,

Note: I eat roast on sundays when my mum makes it ,and anything else she may cook that may not be regarded as low fat, but I eat a civilised portion, but the above is what I eat on a daily basis, changing the recipe of what I am cooking.I also found that carbs and sugar based things are what make my body fat, so when I do eat carbs its a vegitarian day and eat carbs maybe 3 to 4 times a week.
The salad dressing is also home made in the blender, balsamic vineger,dijon musturd, fresh basil leaves,honey, olive oil and salt and pepper.
I am not afraid of chocolate or other things like that, i am not depriving myself, but i have found i dont want a donut or a chocolate bar all the time maybe once a week and even then i cant finish it.

Drinks
I drink about 3 litres of water a day (including what I drink when I am working out)
I have a glass of water with every meal
I have a glass of Juice (with no added sugar) after a Meal but I have to put half water half juice, as even though there is no sugar added its too sweet for me.
I have maybe 2 cups of tea a day with just milk no sugar.
I dont drink carbonated drinks at all!

8 week plan
I work our 6 days a week, Monday through to Saturday:

Monday, Thursday:
30 mins cardio: Spinning or running
Followed by 7 different exercises targeting the upper body and abs.

Tuesday,Friday
30 mins cardio
Followed by 7 different exercises targeting the lower body, thighs hips etc…

Wednesday,Saturday
30 mins cardio
Followed by weight training with 2kg dumbbells, targeting back shoulders biceps and triceps.

Note: I have been eating this way or quite a while, but I only started exercing almost 3 weeks ago, in that time I have lost 8 pounds (which surpassed the goal I had for the month).The above exercise plan I created so that every 2 weeks I up the reps by 5, every month I up the wieght by 1Kg and change the exercises I do incoporating a swiss ball into my ab and upper body routine and weights to my squats and lunges etc.. After 8 weeks (well 5 now) I only intend to work or 3-4 times a week to maitain my weight and muscle tone.

    eat small amounts every 3 hours…snacks aren’t bad…just eat lean protein, leafy fibrous carbsand natural foods and HUGE amounts of water since your body is 70% water. You are working hard in the gym, do your cardio first thing in the morning on an empty stomach…that will amp up your metabolism for the entire day and burn more fat doing your regular daily routine.
