Looking for some recipes/suggestions of some “quick/easy” make ahead breakfasts that I can make (like 1x a time) and then freeze and then the kids or hubby can take out of the freezer and heat up for breakfast. Please don’t just say, “go buy those already pre-packaged sausage muffins” I don’t want that stuff- it’s too expensive- i would rather make my own- so just looking for some recipes (ie sausage egg cheese biscuits/breakfast burritos etc) Also- they should lean more on the healthier side.

    You can make your own pancakes, waffles or french toast and then individually freeze them. When your family wants one, have them pop it in the toaster. I do it all of the time and my kids love it. Plus, they taste better than the store bought stuff.

    I like to make sausage egg and cheese biscuits. Very easy…just patty up some breakfast sausage into 6 patties, fry until done, set aside. Prepare scrambled eggs in a pan, but don’t scramble them. Cut it into 6 pieces. Bake 6 biscuits and split. Assemble sandwich. Biscuit bottom, egg, sausage, american cheese, biscuit top. Wrap each indivually in wax paper and put all in a gallon size freezer bag. Tip on defrosting: just popping the whole thing in the micrpwave will not make a tasty biscuit. Defrost sandwich for a few second, just long enough to be able to take it apart. Separate sausage and egg from biscuit. Heat biscut and egg together then put sandwich back together and heat until hot. Yummy. Good eats on the way to work or bus stop.

    make your own egg mcmuffins: english muffins, scrabbled egg, cheese and sausage individually package , freeze, then nuke for a min and a half to two min

    Like the person said before, you can freeze pancakes and what not, eggs you really cant, but the one thing my husband likes is my homefries… Just take a couple potatoes and dice them how you want them, I have found out that the thinner the better. Then add diced red and green bell peppers and onions. You then can either fry them till the potatoes are brown and crunchy on the outside, but I have found for freezing baking them is better. Just make the mixture into like little 1 serving patties, and back in the oven on like 300 until golden brown. Then freeze what you dont want to eat. Then we you heat them up,(just put them in the oven for 10-15 minutes until fully thawed) you can just scramble some eggs with them, or like my husband just eat them alone with hotsause or ketchup…

    Just so you know, sometimes uncooked potatoes turn brown, so if they are not cooked fully when you freeze them they might turn a little brown, if this happens they are still okay to eat, the color is just from the oxygen that gets to the potaotes. and they will stay good for a couple weeks in the freezer.

    try this.

    Breakfast bowls makes 4-6 (depending on the size you want)

    5 potatoes chopped
    1 onion chopped
    1/4 lb bacon chopped
    6 eggs scrambed with no milk

    In a pan fry chopped bacon till fat is rendered slightly. add potatoes and onion and fry till potatoes are done add scrambled eggs separate into bowls and freeze. I micro these for 3 min. 1 1/2 stir then 1 1/2.

    Point of order.

    When freezing eggs it is best done if they don’t have any milk in them. You sound resourceful you can guess how to make the sandwiches just pre cook the meats too before you freeze. for reheating frozen sandwiches 2 min in micro let set for another 2 min
    I put stickers on them to tell them how to micro them.

  7. i cook up a package of grond sausage let it cool then fill tortilla shells with scrambled egg, sausage, cheese, diced red and green peppers, sometimes salsa. You can make the filling to your families tastes. I wrap them individually in plastic wrap then freze in a freezer bag. You can also put a couple eggs in a microwave safe bowl stir really well, cook til done(about 30-50 sec) then freeze like that or put on bagels or english muffins.
