    Cafe Con Leche y Pan Cubano / Authentic Cuban Breakfast

    1 cup boiling milk
    Cafecito ((espresso made sweet with Cafe Pilon or Bustelo)
    Sugar
    A pinch of salt
    Freshly baked Cuban bread from Cuban bakery
    Butter

    Heat milk. Add freshly made espresso, sugar and a teeny pinch of salt. Stir. The instant milk begins to boil, remove from range. Toast two slices of Cuban bread. Smear with butter and dunk into Cafe con leche (dunking is a must for the full traditional Cuban experience).

    Huevos / Cuban-Style Eggs

    6 eggs
    4 Tbsp. extra virgin olive oil
    2 chopped onions
    2 minced green peppers
    3 mashed garlic cloves
    1 cup chopped, very ripe tomatoes
    1/4 cup canned, drained pimientos
    Garlic salt
    Dash of Tabasco (optional)
    Cheese

    Preheat oven to 350 degrees. In oil, saute onion and pepper till soft. Add garlic and saute 30 seconds. Add tomatoes, salt, and pimientos. Saute 15 minutes. Break eggs over bed of sofrito. Stick frying pan in over. Bake 9 minutes at 350 F. Sprinkle eggs with garlic salt and your favorite cheese. Bake 1 minute. Add a dash of Tabasco and serve hot

    Dulce de Leche / Condensed Milk Dessert Spread

    2 unopened condensed milk cans
    Pan with boiling water

    Place cans in a large pot filled with water. Boil two hours. Refrigerate cans overnight. Next day, open cans and spread over your favorite breakfast toast or Cuban crackers.

    1 cup boiling whole milk
    Cafe Cubano (espresso made sweet with Cafe Pilon or Bustelo)
    2 or more tablespoons sweetened condensed milk
    4 tablespoons evaporated milk
    Freshly baked Cuban bread from Cuban bakery
    Butter

    Heat milks. Add freshly made espresso, sugar and a teeny pinch of salt. Stir. The instant milk begins to boil, remove from range. Toast two slices of Cuban bread. Smear with butter and dunk into Cafe con leche (dunking is a must for the full traditional Cuban experience).
